Pam's Vegetable Soup & Lays Chips Give-away!

Does summer remind you of soup? Summer reminds me of my mom’s Vegtable Beef Soup.   She learned to make it, growing up in a large family, from her mother.  Neither of them needed a recipe, so it was a bit of a deal for my mom to think through how much of which ingredients she puts in it.  I sure am thankful she did – my kids asked me to make it just this week.

It’s full of flavors from the garden, easy to cook on the stovetop, and just the light meal I’m looking for when the heat is on.  It’s a true Midwestern meal, and makes a huge pot – enough to freeze, take to a potluck meal, or share with a neighbor.   You can pair it with sharp cheddar cheese & crackers, a grilled cheese sandwich, or some homemade bread.  No dessert needed!

Pam’s Vegetable Soup

1 pound hamburger1 medium white onion, diced Brown together in large cooking pot. Drain grease, if necessary.
5-6 medium potatoes, peeled & cubed5-6 carrots, peeled & cut to ½” roundsWater Boil 2 qts water.Add potatoes & carrots. Add enough water to cover + 2”Cook until  tender, about 10 minutes. Reduce heat.
2 cans (15 oz ea) diced tomatoes2 cans cream corn1 can kernel corn1 can peas24 oz tomato juice (or tomato sauce)1 can green beans, optionalSalt to taste  Combine all ingredients.  Add meat.Cook to warm until serving time.

 

Although this recipe can be made with frozen or canned ingredients, I’m often blessed with their fresh counterparts in summer, especially corn, carrots, green beans, and tomato juice.  And eating it reminds me of the family, friends & farmers who made the meal possible.

    1. My favorite Midwestern flavor…I’m not sure if this is truly a Midwestern meal, but it is one of my favorites that my mom used to make. Sloppy Joes and corn on the cob….YUM. We would make have Sloppy Joe sandwiches and eat the juiciest, buttery-ist (is that a word??) corn on the cob from my uncle’s farm! It was delicious, and I’m getting hungry just typing about it, even though I hate supper an hour ago.
    2. I’d most want to try the Creamy Garden Ranch type of Lay’s, not just because it is the Midwestern flavor but because I love all things ranch. Yummy. :)
